Crock Pot Spaghetti Bolognese

The Feb issue of Real Simple mag has a slow cooker recipe for bolognese. I made it today with my own special twists, of course. I don't have the actual recipe, plus I didn't measure things, as normal for me.

The main substitution I made was using filet mignon instead of ground chuck. I know! A travesty! But a filet got lost in the freezer. I found it this weekend, January. It was packaged and bought in August. It had freezer burn on spots. So clearly not steak worthy. So I sliced it thin and then chopped. I used my new Rada knife. LOVE! I didn't chop the carrots finely so the slices were very evident in my bolognese.
The before: ingredients prepare to cook for 4+ hours in the crock pot.

It's such a rich sauce! Totally unlike my normal spaghetti sauce. This was complex and warm and I could still smell the Sterling Mertiage red wine I poured in it. I used whole wheat spaghetti. Totally delish!

The after: ready to be enjoyed!

It's a good thing I like it too. I have 4 more servings to eat!
